Montèbore is a Slow Food Presidium cheese typical of the Tortona area, made with raw cow's milk and goat's milk. This cheese, which can also age for several months, is shaped like a wedding cake, as it was one of the cheeses used during ceremonies. The Piedmontese Montèbore has a rich texture and an intense, bold flavor, almost spicy. In addition to being enjoyed on a fine cheese board, it can also be grated over fresh meats or pasta, or used to season stuffed pasta and gnocchi, and finally to cream risottos. Pairings: Excellent throughout the meal, Montèbore is enhanced by honey or jams, fruit jellies, and dried or candied fruit. It is also ideal as a filling for gnocchi and meat and cabbage rolls (capunet, a typical Piedmontese dish), as the heart of vegetable flans, and to add character to a pumpkin risotto.
