Morellino di Scansano DOCG Riserva Le Pupille is a wine produced by the Le Pupille estate in Tuscany. The vineyards where the Sangiovese and Cabernet Sauvignon grapes are grown are highly suited for viticulture and are located at an altitude between 250m and 550m above sea level. The composition of these soils is varied, ranging from clay-iron soil to soils with a good presence of stones. The grapes from which Morellino di Scansano DOCG Riserva Le Pupille wine is derived are harvested separately around the end of September for Sangiovese and early to mid-October for Cabernet Sauvignon, handpicked and brought to the winery for alcoholic fermentation with maceration. This process takes place in stainless steel vats at a temperature of 24°C for a duration that varies depending on the ripening conditions of the grapes in different vintages. The aging of Morellino di Scansano DOCG Riserva Le Pupille takes place mostly in wood of various sizes for 15 months before blending and bottling. Pairings: Excellent with first courses based on elaborate sauces, main courses of red meat or game, and aged cheeses with mustard.
