
Description
Prosecco Colmei Jeio is a wine dedicated to Jeio Bisol, or Desiderio Bisol, affectionately nicknamed Jeio by his wife. This Prosecco is made from 100% Glera grapes harvested in September. The production of this Prosecco uses the cold maceration technique to exploit the aromatic potential of the Glera grapes. After pressing, the musts ferment at a controlled temperature in steel containers where they remain until the time of blending. Once blended, the base wines undergo a second fermentation in an autoclave, a process that lasts about 15-20 days, which promotes the development of bubbles within the wine. Subsequently, all processes are carried out isobarically to avoid damaging the structure of the perlage, including transfers, filtrations, and bottling. It is an Extra Dry Prosecco, therefore slightly sweet with residual sugars at 17 g/L. Pairings: Prosecco Bisol Colmei Jeio is a wine with perfect characteristics to be paired with aperitif snacks, and at the table, it accompanies meals composed of delicate dishes.
