Rosa dei Frati Ca dei Frati is a rosé wine that on Lake Garda is called Chiaretto, produced with the classic red grapes of Garda. The vineyards from which these grapes come are in Desenzano del Garda on a calcareous-clay soil and are harvested around the beginning of September and brought to the cellar for maceration. This process takes place at a low temperature and allows the transfer of aromatic and coloring substances from the skins to the must. When the desired color is achieved, the skins are separated and the must ferments in steel at a temperature of about 16°C. Subsequently, the wine remains in steel for aging for 6 months before being bottled. Pairings: Rosa dei Frati Ca dei Frati is a wine suitable to be paired with lake fish dishes but also with not excessively fatty cured meats, fried vegetables, and white meat dishes.
