Sauvignon Blanc La Tunella

Sauvignon La Tunella is a dry white wine made from pure Sauvignon grapes. The company has 5 hectares of Sauvignon with a planting density of 4,500 vines per hectare. The training system is the traditional single inverted and French guyot. The vineyards, all located in hilly areas, yield excellent results thanks to medium-low production, the cultivation techniques adopted, and the perfect symbiosis between soil type and grape variety. The grapes were hand-picked in the first decade of September. Harvested at the right degree of ripeness, the grapes, after being destemmed and crushed, undergo cryomaceration at 4°C for about 36 hours and are then gently pressed. The resulting free-run juice is statically cold-settled and then added with a fermentation starter previously prepared (3/4 days before) with the best selected grapes of the same variety. It is then subjected to a slow fermentation in stainless steel tanks at a strictly controlled temperature (16°C) which lasts about 30/40 days. Once fermentation is complete, a long series of batonnage at a scaling frequency begins, in order to obtain a wine that is rich and full on the palate, delicately fragrant and at the same time naturally stable.
