The Sicilian fresh cheese made with sheep's milk is flavored with pieces of pistachio, which gives the Nebrus cheese a unique and irresistible taste. The cheese has a short aging period, and the paste is white with pieces of pistachio inside. Storage: Store in a cool, dry place Processing: Before processing, the milk is pasteurized at a temperature of about 70°C. Lactic ferments and calf rennet are added to the pasteurized milk. Once coagulation and curd formation occur, it is broken to the size of a corn kernel. Subsequently, the paste is separated from the whey and placed in special molds and introduced into special warm chambers where the paste reaches optimal pH levels.
