The San Vincenzo Calabrian curved sausage is a typical product made with medium-grain pork meat. The sausage is red in color because pepper preserve and hot chili pepper are added during the mixing process. The spicy version with added chili pepper is famous. Processing: The spicy Calabrian sausage is prepared with selected pork meat, using parts such as the shoulder and the under-rib of the pig, which are minced to a medium grain and mixed with typical Calabrian hot pepper sauce, fennel, salt, and pepper. The casing used is of animal origin and is hand-tied into the characteristic horseshoe shape.
