Taleggio DOP-500 g
Taleggio is a rich cheese originally from Lombardy, specifically from the valley of the same name, Val Taleggio. Made with cow's milk from the finest pastures, Taleggio is a soft cheese with a characteristic washed rind of orange color, which is washed with water and salt during the aging process. Taleggio is a cheese with character, featuring a moderately strong aroma and an unmistakable flavor. This cheese is used in many traditional Lombard and Italian dishes. The paste is moist and soft, becoming crumbly at the core as it ages, with a white color that turns yellow as it matures. Taleggio boasts the DOP designation. Pairings: Taleggio is widely used in cooking for making risottos, pasta, and paired with polenta. We recommend eating it pure to enhance its characteristics. Excellent when accompanied by pears and figs. We suggest tasting it paired with a Curtefranca red or Montepulciano d'Abruzzo. Storage: Store in the refrigerator and cover the cut part. Processing: Taleggio was born from the need to preserve milk from cows grazing in the alpine pastures. For the production of this cheese, raw milk from the previous milking is used, to which calf rennet and lactic ferments are added, thus forming the curd and subsequently the paste, which is placed in the typical molds that give it its characteristic shape. During aging, the rind is washed with water and salt, which give it the characteristic orange color. Aging: 24
