Testun al Barolo is a semi-fat cheese, aged for more than a hundred days on special wooden boards in tuff caves. Part of the aging process involves contact with Nebbiolo pomace used for the production of Barolo, which allows the Testun to acquire typical wine aromas in addition to its long aging. This cheese is excellent when consumed with a good structured red wine, accompanied by a jam or caramelized figs. Testun al Barolo has a purplish color due to the aging with pomace, the paste is hard, with fine and slightly persistent eyes. Pairings: Excellent with a good full-bodied red wine, preferably from Piedmont. Excellent with a Barolo. To be tasted with apricot jams, persimmons in oil, and caramelized figs. Storage: Keep the cheese in a cool and dry place Processing: Testun al Barolo is made with cow's milk. Once the shape is created, the cheese is aged in tuff caves on special wooden boards, during which the cheese enriches and complexifies aromatically.
