Pairings: Excellent consumed pure or during appetizers, on warm bread or with salad. To savor the unique characteristics of the product, we recommend a Piedmontese red wine such as Barbaresco and Langhe DOCG. Storage: Store in the refrigerator, cover the cut part with a cloth. Processing: Sheep's milk is used for the production of Tuma dla Paja Occelli. The milk is left to acidify. In this cheese, very little calf rennet is used. The formed paste is placed in special molds where the cheese is drained, followed by salting. The characteristic of this cheese is the aging as it used to be on straw, which gives the typical aromas to this wonderful cheese.
