Valpolicella Classico Manara is produced with the typical grapes of the Valpolicella region, which are hand-picked around mid-October and brought to the winery for destemming. After a careful manual selection, the crushed grapes are inoculated with selected yeasts, and the fermentation process lasts about 15 days at a temperature of approximately 28°C, during which the aromas are transferred from the skins to the must-wine. Subsequently, Valpolicella Classico Manara is separated from the skins and placed in steel tanks and cement vats for aging, which lasts about 12 months, after which the wine is blended and bottled. Valpolicella Classico Manara remains in the cellar for 6 months after bottling before being released to the market. Pairings: Valpolicella Classico Manara pairs well with first courses with red meat sauces and main courses such as red meat roasts or game. It is also excellent with aged cheeses.
