Williams Pear Distillate Nonino Pirus is a product derived from the careful distillation of Williams pears harvested at perfect ripeness in Trentino Alto Adige in the Val Venosta. Once harvested, the Williams pears are taken to the distillery for fermentation. This phase is very important as the fermentation of the pears must be as pure as possible, avoiding the onset of secondary fermentations that can alter the aromatic profile. Fermentation takes place under vacuum in stainless steel vats at controlled temperature, immediately followed by distillation to prevent harmful secondary fermentations. The distillation is carried out according to the ancient Nonino method in special fruit stills; according to this method, the distillation must be very slow to allow each aromatic molecule to evaporate and condense almost individually and thus be perceptible in the Williams Pear Distillate Nonino Pirus. The distillation is discontinuous and involves the elimination of the heads and tails to keep the characteristics of the fruit intact.
