Zaferan is a cheese made with sheep's milk in Sicily, unique due to the addition of saffron and black pepper during production. A stretched curd cheese, it appears yellow thanks to the saffron, and before being marketed, Zaferan ages for at least 40 days. Excellent cheese to be consumed pure. The rind is rough and yellow like the soft and elastic paste. The milk used comes from farms located in Sicily. Pairings: Excellent cheese consumed pure or melted on slices of game meat. Great pairing with a Sicilian red wine like Nero d'Avola. Storage: Store in the refrigerator, cover the cut part with a cloth. Processing: Raw sheep's milk is heated and added with calf rennet. The curd is broken, usually using a wooden stick to break it. Saffron and pepper are added to the paste, then placed in typical baskets where it takes its typical shape, and a light pressing is performed to remove the whey. The cheese is dry salted.
