Zibibbo Pacenzìa Tenute Orestiadi is a wine made with 100% Zibibbo grapes grown in the territory of Giberellina in Sicily. The Zibibbo grapes are harvested around the first decade of October and then undergo a drying process directly on the plant. After harvesting, the Zibibbo is destemmed and subjected to cold maceration with its own must to enhance the transfer of aromatic substances from the skin to the must before fermentation. Fermentation takes place in temperature-controlled stainless steel containers at about 16°C and stops automatically upon reaching 13.5% alcohol, leaving a sugar residue of 100 g/L. Pairings: A moderately sweet, fresh, and balanced wine that pairs perfectly with fruit-based desserts (including dried fruit) as well as blue or medium-aged cheeses.
