Pan di Pan with Vegetable Rennet is an artisanal washed-rind cheese made from raw mountain milk and vegetable (non-animal) rennet, produced with milk from a single farm, preferably freshly milked. It may simultaneously remind you of Taleggio or Reblochon from Savoy, with an initially tangy taste, then sweet and aromatically buttery. Origin: Val Chiusella, upper Canavese. Sweet with light lactic sensations. The cow is the typical white and red Valdostana breed. Aging: 20 days
