
Description
The Ubriaco with Amarone della Valpolicella DOCG cheese from La Casara Roncolato encapsulates all the flavors of the Lessini mountains. The cheesemaker wanted to challenge one of the major representatives of Veronese and Italian oenology: the Amarone della Valpolicella DOCG. The cheese is made from cow's milk using the same technique as Monte Veronese DOP. While still fresh, it is placed in contact with the grape pomace of grapes set to dry with Amarone DOCG wine. After contact and resting, the cheese is aged from 8 to 19 months. It is a rare delicacy! During the aging in wine, it absorbs a significant amount of product that penetrates centripetally towards the center. Subsequently, during maturation, the drying of the cheese tends to evolve the flavors while maintaining the evolutions of the Amarone DOCG.
