Pecorino di Fossa originates from the legendary pits in the Rubicone district, in Forlì, Romagna. The unique aging process is a centuries-old tradition in these areas, leading to the creation of prized and renowned products. We have selected for you the Pecorino di Fossa from Fosse Venturi, a producer known for the best performances and a long tradition of prestige. These pits are large cavities in the rock where the cheese wheels are placed for 90-100 days. In this way, the sheep cheeses are enriched with typical and unique aromatic components: they become flavorful and sweet, with a particular compactness and creamy on the palate. Characteristic shape The strange and irregular shape of these cheeses is due to the fact that they are stacked on top of each other and thus compressed in the pit for at least three months.
