A sparkling wine of great refinement made using the ancestral method, which best expresses the Pinot Noir and the unique terroir of Oltrepò Pavese. Cultivation area Produced on the hills of Oltrepò Pavese, in Lombardy, where the vineyards of Castello di Stefanago are located at an altitude between 350 and 500 meters above sea level. The estate covers 135 hectares, of which 20 are dedicated to vine cultivation. Technical characteristics Grape variety: 100% Pinot Noir Vinification: The grapes, harvested manually at full ripeness, are gently pressed to limit contact with the skins. Spontaneous fermentation occurs in steel with indigenous yeasts. The sparkling process takes place in the bottle according to the ancestral method, with aging on the lees for 48 months before disgorging. Alcohol content: 12.5% Tasting notes Color: Bright straw yellow with golden reflections. Aroma: Evolved and elegant aromas of tapenade, yeasts, yogurt, and bread. Taste: Round and complex, with an almost sweet perception despite only 3 grams of residual sugar per liter. The finish is long and very elegant.
