Certainly rich in original executions, the Carrobiolo (Monza) catalog, created by brewer Pietro Fontana, includes, among other labels, the famous Porcini Imperial Stout. This version of the Imperial Russian Stout (IRS) involves the addition of porcini mushrooms in two stages: fresh during boiling and dried (through extraction with beer) during maturation. The result is a product as curious as it is intriguing, where the earthy component of the main ingredient harmonizes perfectly with the organoleptic profile typical of this type of beer. The color is dark, with a deep and impenetrable ebony hue; the foam is beige, lush, and compact, thanks to the addition of 10% rolled oats in the mix. The classic aromas (coffee, roasted barley, chocolate, caramelized brown sugar, and toasted nuts, with a clear note of walnut liqueur) blend with the distinctive ones of the porcini mushroom, enhancing the umami components. On the palate, we find the same textures: a full and warm taste (11% alcohol), which starts sweet and then becomes progressively less sugary, leading to a soft and proportionately bitter and roasted finish. A complete meal, without a doubt.
