The historical narrative tells us that Cotechino was born during the siege of the city by the troops led by Pope Julius II. The peasants and soldiers were in a state of extreme hunger and decided to slaughter the few remaining pigs, using the meat cuts to fill the animal's intestine. This practice not only provided them with a food source but also helped to increase the preservation period of the meat, ensuring a valuable resource during difficult times. HOW TO ENJOY IT Immerse the Cotechino, still in its packaging, in water and boil for 30 minutes. Cut a corner of the package to allow any gelatin to escape. Open the bag and slice, serving it hot.
