It is raised semi-wild, fed with local hay and without force-feeding. The milk it produces is extraordinarily rich in noble proteins and highly digestible due to the higher presence of the A2 variant of beta-casein, a characteristic increasingly appreciated by discerning consumers. This Parmigiano Reggiano is made exclusively in small dairies, where every phase – from milk collection to aging – is followed with artisanal care. WHY FROM MODENESE WHITE COW The Modenese white cow produces between 9 and 12 liters of ORGANIC milk per day (1/5 compared to a Friesian cow) The production of ORGANIC Parmigiano Reggiano with only mountain milk from Modenese white cows is extremely limited: in four ORGANIC farms we raise about 200 heads The ORGANIC milk of the Modenese white cow, thanks to a particular KBB beta casein, is the qualitatively best milk for the production of ORGANIC Parmigiano Reggiano. Consequently, the resulting Parmigiano Reggiano is of extremely high quality. The dairy is now at the forefront of protecting the Modenese white cow, a bovine breed on the verge of extinction.
