Description
The Cami dels Xops is a cuvée of Macabeo and Xarel-lo from two adjacent vineyards. The grapes are fermented with indigenous yeasts in stainless steel tanks and old 225L French oak barrels. Bottling occurs before the primary fermentation is completed (with about 20g/L of residual sugar) following the ancestral method style. No herbicides or pesticides are used in the vineyards. The terroir of Penedès has something unique that Agustí Torelló Roca is trying to express to the world. Through individual plots and a deep respect for agriculture and winemaking, Agustí is committed to revealing the soul of Alt Penedès. In 2015, Agustí founded Anima Mundi with the aim of showcasing the true essence of the grape and the land through careful observation of the earth. In addition to Anima Mundi, Agustí is the head winemaker of the family winery AT Roca, specializing in champenoise method sparkling wines that reflect the terroir of the young D.O. Classic Penedès, and the new Sileo project, which focuses on expressing the terroir of Cornudella in Montsant with Garnacha and Cariñena wines. Anima Mundi, however, represents the dream realized by Agustí outside of Spanish denominations, and is the beating heart of this project in a hidden corner of the family winery and vineyards, located near the 11th-century Benedictine monastery of Sant Sebastià dels Gorgs. The vineyards are located in the Costers d'Ordal and boast extremely calcareous soils due to the influence of the nearby Garraf Massif. This area is situated between Sant Sadurní d'Anoia, where the winery is currently located, and Vilafranca del Penedès. Above the ancient monastery, the landscape is a mosaic of mixed soils, various microclimates, and eroded valleys created by the numerous watercourses flowing westward from the limestone massif of Garraf to the Mediterranean Sea.
