The Terre Siciliane Nero d'Avola Passo delle Mule originates from the vineyard of the same name in the Suor Marchesa estate of Duca di Salaparuta, located in the municipality of Butera along the Riesi axis, in the province of Caltanissetta. It is made from pure Nero d'Avola grapes, hand-picked and selected in the second half of September. Fermentation occurs, with maceration, at a controlled temperature of 28-30°C for about 8 days. Subsequently, the wine ages in oak barrels for at least 10 months and in the bottle for the following 6-8 months. It has an intense ruby red color. It opens on the nose with an enveloping aroma of morello cherry and raspberry, enriched by spicy notes of vanilla. On the palate, it is broad and velvety, with austere tannins and good structure. It finishes with a pleasantly aromatic and persistent finale. This red wine is perfect for accompanying dishes based on red meats and well-aged cheeses.
