Description
CHARACTERISTICS With a rather pleasant taste, Ragusano DOP is a sweet and mildly spicy cheese in the first months of aging and becomes pleasantly spicy at advanced aging. It is a stretched curd cheese, obtained through a spinning process that uses hot water at 70-80°C. The cows' diet mainly consists of grazing on the spontaneous herbs of the natural pastures of the Iblean territory and possibly cultivated forage crops. Excess forage, even hayed, serves as supplementary forage to grazing in the following season. Aging takes place in cool environments with geologically natural walls that ensure 14-16°C and 80-90% humidity. The cheese forms are tied in pairs with thin ropes and then hung over wooden beams. To obtain the DOP mark, the cheese must age for at least 3 months, and aging can extend beyond 12 months. PAIRINGS It is widely used in the preparation of typical Sicilian gastronomy dishes and pairs very well with white wines. The aged version, however, is best enjoyed with red wines.
