The almond varieties we use for our production are Tuono, Genco, Supernova Ferragnes, Romana, Pizzuta and Fascionello, all typical varieties of Sicily. The almond harvest takes place between August and September. After harvesting and husking, the almonds are dried for 3-4 days in the sun. Once dried they are stored in bags and stored in cool, dry warehouses. The shell perfectly protects the almond and allows it to be preserved for the whole year and even longer.
