Creamy raw truffles made from avocado and cocoa, without cream or butter. Easy and quick to make, they can be coated with cocoa, crushed hazelnuts, coconut, or pistachio.
Put the flesh of the ripe avocado in the blender.
Add the unsweetened cocoa powder, maple syrup (or honey), a pinch of salt, the cinnamon, and the peanut flour (or almonds or hazelnuts).
Blend until a smooth and homogeneous cream is obtained.
With damp hands, take small portions of the cream and form balls.
Roll the balls in the chosen coating (cocoa, crushed roasted hazelnuts, grated coconut, or crushed pistachio).
Transfer the truffles to the refrigerator for at least 30 minutes to firm up before serving.
