

Simple and quick orange cake proposed on Instagram: a moist cake flavored with orange, suitable for a snack. The author also suggests cooking in an air fryer as an alternative to the oven.
Preheat the oven to 170°C fan (alternatively set the air fryer to 170°C for the first phase).
Wash the organic orange well and, if indicated in the original preparation, grate the zest and squeeze the juice (here the whole orange is used: adjust according to preference).
In a bowl, beat the eggs with the sugar (or erythritol) until frothy.
Add the honey and extra virgin olive oil, mixing well.
Sift together the flour and potato starch with the baking powder and incorporate into the mixture until a homogeneous batter is obtained.
Add the orange (pulp and/or juice and zest) to the batter and mix to distribute well.
Pour the batter into a baking pan lined with parchment paper or buttered and floured.
Bake in a fan oven at 170°C for about 40 minutes, checking the cooking with a toothpick.
Air fryer alternative: cook at 170°C for 15 minutes, then lower to 160°C and cook for another 15 minutes; check with a toothpick.
Let cool before unmolding and serving.
