Pour the altroegg mix into a bowl and add the water gradually, mixing with a whisk. Once you have a smooth mixture, gradually add the flour and start kneading first with a spoon and then by hand. When a dough begins to form, add the oil to help you stretch it and form a ball. Let it rest for 15 minutes.
In the meantime, prepare the ragù by directly combining oil, tomato puree, beef flavor trita mix, and water in a non-stick pan. Let it cook for at least 20 minutes.
Take your dough and roll it out with a rolling pin or use a pasta machine to make it even thinner. Cut out rectangles with a pastry wheel.
Take a baking dish and layer the lasagna, starting with the béchamel, then the pasta, ragù, and béchamel again. If you like, add veg mozzarella for a stringy effect.
Cook in an air fryer or oven at 200°C for 10 minutes, then add mozzarella on top or some grated cheese and cook for another 10 minutes. For the last 5 minutes of cooking, increase to 250°C or set to grill mode.
