600g600g - Arborio superfine rice
240g240g - Castelmagno
50g50g - 1 untreated bergamot
1unit1unit - Butterto taste
- Onionto taste
- Pepperto taste
- Saltto taste
Preparation

Chop a quarter of an onion and let it soften in a pan with a knob of butter.
- STEP 2 OF 6
When the onion becomes translucent, add the rice and toast it for a couple of minutes.
- STEP 3 OF 6
Moisten with hot broth and add a pinch of salt.
- STEP 4 OF 6
Stir until the rice has absorbed all the liquids.
- STEP 5 OF 6
Continue adding broth and stirring until the rice is fully cooked. This will take about 18 minutes.
- STEP 6 OF 6
Remove the risotto from the heat and stir in the Castelmagno and finely grated bergamot zest.
