Sift and combine the cornstarch and unsweetened cocoa in a pot.
Add the coconut milk (sweeten to taste if desired) and mix well.
Place the pot over low heat and, when the mixture begins to boil, stir continuously to prevent lumps.
Continue stirring until the mixture thickens.
Pour the mixture into a container and let it cool.
Refrigerate for at least 3 hours.
Dust with unsweetened cocoa before serving.
