Blend 3 eggs with 80g of brown sugar.
Add 300g of Greek yogurt 0%, the pulp of a grated apple, and 80g of seed oil.
Mix the ingredients well.
Sift and add: 100g of rye flour, 100g of semolina, 80g of potato starch, 1 packet of baking powder, star anise, vanilla, and cinnamon to taste.
Pour into a buttered and floured cake tin.
Arrange a wedge of thinly sliced apple (in the center of the cake) and chopped hazelnuts on top.
Bake in a preheated static oven at 180°C for about 30-40 minutes.
Serve with a cup of orange and cinnamon tea for a perfect pairing.
