Preparation

  1. STEP 1 OF 6

    Thinly slice the onion and sauté it in a non-stick pan with extra virgin olive oil until golden.

  2. STEP 2 OF 6

    Clean, wash the vegetables, and cut them into regular cubes. Add the vegetables to the onion sauté, season with salt, and cook for about 10 minutes, stirring often.

  3. STEP 3 OF 6

    Boil the fregula in plenty of salted water for about 5 minutes, drain it, and add it to the vegetable sauce.

  4. STEP 4 OF 6

    Add a little vegetable broth and continue cooking the fregula as if it were a risotto.

    Once cooked, add the chopped basil and stir in the grated pecorino.

    Let it rest for a few minutes and serve with a grind of black pepper.
