Cook the black rice in salted boiling water. Once ready, drain it, set it aside, and let it cool. Wash and slice the zucchini into rounds, then cook them covered with a bit of water in a pan for about 10 minutes, stirring occasionally with a wooden spoon. Let them cool. Cook the egg and cut it into two equal parts. Cut the salmon with a fork and knife. Wash the avocado, remove the skin, and cut it into cubes. Put all the ingredients together in a bowl and mix well with a wooden spoon. Dress with a drizzle of extra virgin olive oil and enjoy.
