Apple crepes: a light dessert to prepare, without butter and without milk. Ideal when you have leftover apples and want a sweet treat without turning on the oven.
Peel the apples and cut them into chunks.
Cook the apples in a pan with a little water until they are soft.
Meanwhile, prepare the crepe batter: in a bowl combine the egg, water, oatmeal flour, and a pinch of cinnamon; mix well eliminating lumps.
Lightly grease a crepe pan with a drizzle of oil and cook the crepes by pouring a small amount of batter; cook them on both sides until golden brown.
Let the crepes cool slightly and make sure the apples are cooked.
Assemble the crepes by filling them with the cooked apples as shown in the photo.
Serve with a dusting of powdered sugar and cinnamon to taste.
