Almond brittle is a typical dessert of the Sicilian tradition, characterized by its crunchy texture and the intense flavor of almonds. The preparation is simple and requires only three ingredients: blanched almonds, sugar, and olive oil. The almonds are lightly toasted in a pan with olive oil, then combined with caramelized sugar. Once cooled and hardened, the brittle can be broken into pieces and served as a dessert or as an accompaniment to desserts and ice creams.
Toast the almonds in a hot oven at 180 degrees for about 5 minutes
Let them cool and chop them coarsely
Put the sugar in a large pan with a few tablespoons of water and let it dissolve over low heat
