Fry the almonds in a bit of seed oil, blend them and let them cool
Whip the egg yolks
Whip the egg whites separately until stiff peaks form
Whip the cream with the sugar
Combine the yolks and then add the whipped egg whites
Mix well and finally add the almonds
Place the mixture in a baking dish and store in the freezer for 24 hours
The parfait should be served with melted dark chocolate poured over the portions
