Prepare a syrup in a saucepan with the remaining sugar and water, boil it until it reaches a temperature of 112 degrees and incorporate it into the whipped egg whites while pouring it in a thin stream.
Cream the butter in a bowl, then gradually incorporate the egg white and sugar mixture.
You can use the plain cream or flavor it as desired, for example, by adding coffee or cocoa powder.
