
Carnival Tortelli
Carnival tortelli are traditional Italian sweets prepared during the Carnival period. They are soft and tasty fritters, flavored with lemon zest and powdered sugar. Perfect for a sweet snack during the celebration!

Preparation

Put a quarter of water, a pinch of salt, and 60 g of butter in a saucepan

Bring to a boil, stirring until the butter is melted

Remove the saucepan from the heat and pour in 150 g of sifted flour all at once

Stir to incorporate the flour into the water and return to low heat

Continue stirring and cook the dough until it forms a ball that detaches from the sides of the pan, sizzling slightly

Let it cool while stirring; then add the grated zest of half a lemon and 2 tablespoons of sugar to the mixture

Incorporate 3 small eggs one at a time

Let the mixture rest for an hour, and in the meantime, to prepare the cream, crack the remaining 2 eggs and slide the yolks into a small saucepan

Add 3 heaping tablespoons of sugar and beat with a hand or electric whisk

When the yolks are fluffy and frothy, add a heaping tablespoon of flour, sifting it through a sieve, and mix well
