Cherries preserved in alcohol are a delicious traditional Italian sweet, particularly common in the Emilia-Romagna region. These cherries, soaked in pure alcohol and flavored with cinnamon and cloves, develop an intense flavor and a soft texture. Once prepared, cherries preserved in alcohol can be kept for a long time and enjoyed as a dessert or used to enhance other sweet preparations, such as cakes or ice cream.
Cut the stems of the cherries to about 1 cm from the base
Rinse them in a bowl and dry them very gently, then place them in glass jars trying not to leave too much empty space
Sprinkle them with enough sugar, add a little cinnamon and cloves, and cover them with the alcohol
