Boil the chestnuts with the shell on
Then peel them and remove the inner skins
Pass them through a food mill
Melt the chocolate in a bain-marie, let it cool and combine it with the chestnuts, the rum and the sugar. Mix, then pass the mixture through a sieve onto the serving plate to form a small mound of fine vermicelli
Cover with the whipped cream and refrigerate for at least 1 hour
