
Chestnuts in Rice Cream
Chestnuts in rice cream is a very tasty and nutritious autumn dessert. This traditional recipe combines delicate flavors and creamy textures. The rice cream perfectly complements the dried chestnuts and the sweet touch of fig jam. The pine nuts add a crunchy and aromatic touch, thus completing the dish. Ingredients
- Dried chestnuts
300g300g - Rice flakes
250g250g - Milk
50cl50cl - Vanilla pod
1piece1piece - Honey
2tablespoons2tablespoons - Rice malt
2tablespoons2tablespoons - Pine nutsto taste

Preparation

After washing them, soak the dried chestnuts overnight and then cook them for 45 minutes in slightly salted water
- STEP 2 OF 5
When they are well softened, drain them and while they are still warm, mix them with the honey

In the meantime, prepare a cream by heating the milk and then adding the rice flakes and vanilla; let it cook for 15 minutes over a very low flame with a flame diffuser, stirring continuously

At the end of cooking, add the rice malt and mix well

Serve the warm chestnuts with a few spoonfuls of rice cream, some lightly toasted pine nuts, and a touch of fig jam
