Cut the chicken (already eviscerated) into pieces, wash and dry it
Brown it in the butter with salt and pepper
Add 1 tablespoon of flour and toss frequently, adding a few tablespoons of broth
Beat the egg yolks with the lemon juice and pour them over the chicken after about 40 minutes of cooking
Mix well and continue cooking in a hot oven for a few minutes
