The chocolate marquise is a spoon dessert typical of French tradition. It has a creamy texture and an intense dark chocolate flavor. Perfect for finishing a special dinner or for a indulgent snack.
Break the chocolate into pieces in a saucepan and melt it over low heat with 3 tablespoons of water
Work the butter with a spatula to soften it
Separate the whites from the yolks and add the 5 yolks one at a time to the butter, mixing very well after each addition
Add the icing sugar and continue mixing
Finally add the melted chocolate and flavor with vanillin (or with coffee if you prefer)
Let it cool
Then beat the 3 egg whites until stiff and fold them into the mixture
Pour into a buttered mold and let rest for 10 hours in the fridge
Serve on a bed of crème anglaise
