Chocolate mousse is an irresistible dessert, perfect for chocolate lovers. Its light, velvety texture makes it a fantastic dessert to enjoy on any occasion. With a few simple ingredients and a bit of patience in preparation, you can make a delicious homemade chocolate mousse.
Melt the chocolate and butter in a bain-marie (but I confess I do it in the microwave and it takes me a minute or a little more)
Let it cool and gradually incorporate the eight yolks one at a time, stirring constantly
In a separate bowl, whisk the nine egg whites to stiff peaks and slowly fold them into the mixture with gentle movements from top to bottom to avoid deflating them
Refrigerate everything, even overnight (maybe 2 or 3 hours are enough but I usually make it the day before)
I serve it with cat's tongue biscuits
