Melt the chocolate and butter in a double boiler (though I confess I do it in the microwave and it takes me a minute or a little more)
Let it cool and incorporate the eight yolks one at a time, always stirring
Separately, beat the nine egg whites until stiff peaks form and slowly fold them into the mixture with upward and downward movements to prevent them from deflating
Put everything in the fridge for an entire night (perhaps 2 or 3 hours are enough, but I usually make it the day before)
I serve it with cat's tongue cookies
