
Cream puffs are soft and tasty little pastries that can be filled in many different ways. They have a round shape and are perfect to enjoy with a cup of tea or coffee. This recipe is originally from Francia but is also highly appreciated in Italy, especially during the Carnevale festivities.



Bring 12 cl of water to a boil with 60 g of butter
Then add all at once, off the heat, 75 g of sifted flour with a pinch of salt
Return to the heat and cook for a few moments, stirring constantly until the mixture comes away from the sides
Transfer it to another bowl and let it cool completely
Then add 2 eggs one at a time, mixing vigorously
Put the mixture into a piping bag and pipe mounds onto a buttered and floured baking sheet
Bake in the oven at 180°C for 18 minutes
