Cocoa truffles are delicious chocolate treats, perfect to enjoy after a meal. Their origin is uncertain, but they have become very popular in Italian cuisine.
In a saucepan, melt the chopped chocolate in a bain-marie
In a bowl, beat the egg yolk with 2 tablespoons of sugar until you get a frothy cream, then add the sifted cocoa
Heat the cream with the remaining sugar, add the butter and let it melt while stirring
Off the heat, add the beaten yolk and the melted chocolate
Let the mixture cool, then make many small truffles by wrapping them in cocoa powder
