
Cocoa truffles are delicious chocolate treats, perfect to enjoy after a meal. Their origin is uncertain, but they have become very popular in Italian cuisine.



In a saucepan melt the chopped chocolate in a double boiler
In a bowl whip the egg yolk with 2 tablespoons of sugar until it becomes a frothy cream then add the sifted cocoa
Heat the cream with the remaining sugar add the butter letting it melt while stirring
Off the heat add the whipped yolk and the melted chocolate
Let the mixture cool then shape into small truffles rolling them in cocoa powder
