Cocoa truffles are delicious chocolate sweets, perfect to enjoy after a meal. Their origin is uncertain, but they have become very popular in Italian cuisine.
In a saucepan melt the chopped chocolate in a double boiler
In a bowl whip the egg yolk with 2 tablespoons of sugar until you obtain a frothy cream, then add the sifted cocoa
Heat the cream with the remaining sugar, add the butter and let it melt while stirring
Off the heat, add the whipped egg yolk and the melted chocolate
Let the mixture cool, then form many small truffles and coat them in cocoa powder
