

The elegant cheesecake is a classic and refined dessert made with Philadelphia cream cheese, eggs, sugar and a note of Kahlua for a special touch. The cookies should be hard, like breakfast cookies; if you cannot find vanilla or chocolate ones you can add a teaspoon of unsweetened cocoa when mixing them, otherwise try a bit of vanilla or cinnamon or nothing at all if these additions seem odd
Preheat the oven to 150-160°C
Place the cookies in a blender or food processor and pulverize them
Then work them together with the butter and the cup of sugar (optionally cocoa or vanilla) until you create a mixture to line the base of a pan (about 20 cm in diameter)
It is better to use a pan with a removable base when you want to portion the cake
Beat the cream cheese in a mixer (30 seconds); when it is creamy gradually add the remaining sugar, the 4 eggs, and the vanilla (or Kahlua)
Pour the mixture into the pan where the cookie base is already placed, bake for 45-55 minutes
Let cool in the pan placed on a rack for about an hour
Refrigerate for 3 hours before serving
The oven baking can be done in a water bath (bain-marie)
In this case, cover the outside of the pan (if it is one of those with a removable base) with a sheet of aluminum foil reaching the edge
