Make the batter: in a bowl, place the flour in a mound, put an egg yolk, a tablespoon of oil, and a pinch of salt in the center

Cover and let rest for at least half an hour, then fold in the stiffly beaten egg white
Wash and dry the radicchio, removing the larger leaves one by one and cutting the central core into thin wedges
Dip each leaf in the batter and fry it in plenty of oil, turning it to brown and golden
