
Fried red radicchio is a tasty and crunchy side dish typical of Italian cuisine. The radicchio is dipped in a light batter made of flour, egg, and beer, and then fried in olive oil until crispy. It is a simple dish to prepare but rich in flavor. This side dish is ideal for accompanying meats and cheeses.









Make the batter: in a bowl, place the flour in a mound and add a yolk, a tablespoon of oil, and a pinch of salt in the center.
With a wooden spoon, mix very well to avoid lumps, then dilute with the beer.
Cover and let it rest for at least half an hour, then fold in the beaten egg white.
Wash and dry the radicchio, separating the larger leaves one by one and cutting the central heart into thin wedges.
Dip each leaf into the batter and fry it in plenty of oil, turning it to color and brown it.
Drain and dry on paper towels.
Salt and serve immediately.
