
Grandmother's Pardulas are a traditional Sardinian dessert, typical of the province of Nuoro. These small pastries are made with a filling of fresh cheese, semolina, grated lemon, and saffron, which give them a unique and aromatic flavor. After baking, they are decorated with icing or honey and colorful sprinkles. Pardulas are an irresistible dessert, perfect for any occasion.





Grate the fresh cheese that has been aged for at least 2 days, put it in a clay pot, bring it to low heat, and continuously stir while adding in order: 2 heaping tablespoons of semolina, the grated zest of 2 lemons, 1 gram of powdered saffron, and 10 tablespoons of granulated sugar.
Having prepared the filling for the Cardias de Casa fiiscu, it is necessary to prepare the dough for the wrappings.
Place the flour in a fountain shape on the table, add the 5 remaining egg whites in the center, lightly beaten with a fork, 2 tablespoons of lard, and a pinch of salt.
Mix everything thoroughly and for a long time, then roll the dough into thin sheets and cut these into discs of about eight cm in diameter.
My grandmother used a coffee saucer as a mold and cut the circumference with a smooth, thin pasta cutter.
Once all the discs are obtained, place a large walnut-sized amount of the prepared filling in the center of each.
