
Kiwi mousse is a creamy and velvety dessert, with a sweet and slightly sour flavor. Its delicate consistency perfectly combines with the freshness and intensity of the kiwi. Dissolve the sugar over the heat with a bit of water until a syrup is obtained to pour into a bowl.
Peel the kiwis, slice them and blend. Set aside some pieces.
Beat the egg yolks with the sugar syrup until you have a soft and fluffy cream.
Whip the cream and combine it with the kiwi puree to the cream.
Mix and place in the freezer for at least 1/2 hour.
Serve by placing the pieces of kiwi at the bottom of a glass and the mousse on top.
